Ingredients

Salad Base

  • 10 ounces grape tomatoes
  • 3 mini cucumbers
  • 2 ounces feta cheese
  • 1 small red onion
  • ¼ cup cilantro leaves

Mediteranean Dressing

  • 2 Tablespoons extra virgin olive oil
  • 1 Tablespoon lemon juice
  • 1 garlic clove grated
  • 2 Tablespoons fresh dill chopped
  • ¼ teaspoon salt to taste
  • ¼ teaspoon black pepper to taste
  • ½ teaspoon honey or sugar or sugar substitute optional

Instructions

  • Prepare the dressing: In a small bowl, combine the extra virgin olive oil, lemon juice, grated garlic, freshly chopped dill, sugar salt, and black pepper. Whisk all the ingredients together until they're well combined.

  • Assemble the Salad: Slice the grape tomatoes in half. Dice the mini cucumbers. Slice the onion. Finally, crumble the feta cheese into small pieces and slice the fresh cilantro leaves.

  • Toss and Serve: In a large salad bowl, combine the grape tomatoes, cucumber, diced red onion, and crumbled feta cheese. Drizzle the dressing over the salad mixture. Toss. Garnish with black olives is desired. Serve immediately.
