- 2 tablespoon unsalted butter
- 2 teaspoon minced garlic
- 8 oz baby bella mushrooms thinly sliced
- 1 teaspoon dijon mustard
- ¼ teaspoon salt to taste
- ¼ teaspoon black pepper to taste
- ¼ teaspoon thyme about 4 sprigs
- 2 teaspoon Worcestershire sauce
- ¾ cup heavy cream
- ½ cup chicken broth, milk or water optional, to thin the sauce
- ½ cup parmesan cheese grated, optional
Pre-heat a medium saucepan over medium heat. Add the butter. Once the butter has melted add the garlic. Stir until fragrant, about 30 seconds.
Add the baby bellas and sauté until mushrooms are golden brown - about 7-8 minutes.
Add the Dijon mustard, Worcestershire sauce, salt, black pepper, thyme, and heavy cream to the hot pan. Turn the heat down to medium-low and simmer until the sauce is thickened, about 8-10 minutes. Stir occasionally to avoid burning. If a thinner sauce is desired add a little milk, chicken broth or water until the sauce is the desired consistency. Taste and adjust the creamy sauce for seasoning. Remove from the heat and serve immediately. Note that the sauce will continue to thicken as it cools.
- Deglazing the pan with liquid is the best way to dissolve and incorporate all the flavor at the bottom of the pan.
- If making sauce for steak or chicken use the leftover oil in the pan along with a little bit of butter, if needed, to make mushroom gravy.
